Looks great! The red/black with a few silver accents bring it all together. I think the GRX600 crank is a better choice because of the 46/30 than GRX800 with the 48/31.

R7000/GRX810 2x11 is my favorite, especially when paired with a 46/30 crank. I think a 48/32 crank is a better option the roadie 50/36 for most of my riding. I do have spare set of RS700s but I am not sure if I want to sell them... Your shifter options are limited the RS700 or Microshift...

I have the silver NA rings to go with it but opted to go with the black Suntour pieces to match the original vibe. I also have the NA crank in black with black rings. Definitely a favorite of mine!
