I like the blue colored one. Except for the stem. I have never seen a picture of one that tall. I had no idea such a thing existed.

I do not currently own a 2.8 framed bike. But on the frames I do, I have 25mm tyres installed and I would think a 28mm would be possible. Hopefully someone with a 2.8 will be along to advise.
BL I received a brake caliper mod today. I bought a set of Shimano 105 (5501) calipers in black and added Kool Stop pads. A remarkable improvement.

I haven't a clue without diving into the catalogs. And I don't recall seeing anything like it in the catalogs. But I do know this from just looking at the pictures that your bike is awesome! Congrats! What a find!

I fully disassembled and serviced the bike over a period of a few months. I installed new Suntour cables/housings. And Dia Compe cables/housings. I found a new in the box saddle on ebay. I paid dearly. The chain is KMC 8 speed.
I agree @letsbike on the bag. I’ve seen quite a few yellow bags on ebay. Not sure if there’s a toot bag, but definitely several mint yellow small bags.
Here’s one on ebay. There are a few of them on there but unfortunately they are all too small. I would buy one in my size.
